Seasoned Tempeh Salad

INGREDIENTS:

  • 1 cup greens
  • 8 cubes seasoned tempeh (see below)
  • 1/4 cup cucumber, diced
  • 1/4 celery, diced
  • 1 Tbsp. pecans
  • 1 Tbsp. goat cheese
  • 1 tsp. sunflower seeds
  • Creamy French Dressing (see below)

CREAMY FRENCH DRESSING:

Whisk together:

  • 1 Tbsp. mayo
  • 1 tsp. apple cider vinegar
  • 1/2 tsp. tomato paste
  • 10 drops (1 tsp.) liquid sweetener
  • 1/4 tsp. onion powder
  • 1/8 tsp. garlic powder
  • 1 tsp. water

SEASONED TEMPEH:

Dice 8 oz. tempeh block into 1″ cubes (32 pieces). Soak at least 10 minutes in a bowl with 1 Tbsp. low sodium soy sauce and 2 Tbsp. water (toss well). Toss cubes with 2 Tbsp. nutritional yeast and coat well. Place tempeh on parchment paper in a small air fryer set to 375 degrees. Sprinkle with 1 tsp. Montreal Steak Seasoning. Cook for 12 minutes. Cool before using on your salad!

DIRECTIONS:

Prepare seasoned tempeh; let cool. Prepare dressing; set aside. In a 16-oz. jar, layer: greens, celery, cucumber, tempeh, dressing, pecans, sunflower seeds, and goat cheese.
