
INGREDIENTS:
1/4 c. mixed greens
1/4 c. cooked lentils, cooled
1 hard boiled egg, chopped
1/4 c. cauliflower, chopped
1/4 c. celery, diced
1/4 c. grape tomatoes, halved
1/8 c. black olives (canned, sliced)
1/8 c. mushrooms, diced
1/8 c. red onions, diced
1/2 tsp. onion powder
1 tsp. dried oregano
1 Tbsp. herbed goat cheese crumbles
DIRECTIONS:
Mix lentils, olives, mushrooms, onions, oregano, and onion powder together; set aside.
In a 16-oz. jar, layer lentil mixture, tomato, egg, celery, cauliflower, greens, and goat cheese. Serve warm.
