Chili Lime Mango Salad

Chili-Lime-Mango-Salad

INGREDIENTS:

1/2 c. mixed greens
1/2 c. mango, diced
1 small tomato, diced
1/2 c. black beans and corn mixture (canned; rinsed and drained)
1 shallot, diced
1/4 c. cilantro
1 Tbsp. wonton strips

Chili Lime Dressing:

Juice of 1 lime
1/2 tsp. cumin
1/8 tsp. chili powder
1 tsp. apple cider vinegar
1 clove garlic, minced
1/8 tsp. sea salt

Whisk all ingredients together. Makes 1 serving.

DIRECTIONS:

Mix all ingredients except the lettuce greens and wonton strips together and place in a 16-oz. jar. Top with greens and wonton strips; pour chili lime dressing over the top.
