Chicken Beets and Blackberry Salad

 

INGREDIENTS:

  • 1/4 cup cooked chicken
  • 1/4 cup spinach
  • 1/4 cup blackberries
  • 1/4 cup beets, diced
  • 1/4 cup celery, diced
  • 1/4 cup carrots, diced
  • 1/4 cup Brussels sprouts, sliced
  • 1 Tbsp. red onion, diced
  • 2 tsp. sunflower seeds
  • 1 Tbsp. goat cheese crumbles

BALSAMIC DRESSING:

  • 2 tsp. avocado oil
  • 2 tsp. balsamic vinegar
  • Salt & pepper to taste

DIRECTIONS:

Layer in a 16 oz. Mason jar: spinach, Brussels sprouts, chicken, celery, carrots, beets, blackberries, onion, sunflower seeds, and goat cheese. Top with dressing.
