
INGREDIENTS:
- 1-1/4 c. finely ground almond flour
- 1/4 c. monkfruit sweetener
- 1/2 c. chopped almonds
- 1 egg (or equivalent egg substitute)
- 2 tsp. almond extract
- 3/4 tsp. baking powder
- 1/8 tsp. salt
DIRECTIONS:
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
In a mixing bowl, add egg and stir gently. Add sweetener, almond extract, salt, baking powder, and almond flour. Stir well until the dough comes together completely. Fold in almonds.
Drop 1-inch rounds of dough onto the baking sheet, leaving a little bit of room in between each ball.
Bake for 20-25 minutes, until the tops are slightly browned. Cool completely before placing into Mason jars for storage.
